Is there anyone here who has some knowledge about eye signs and maybe can look at the eye of 2 birds we bought today ?

I'm not an eyesign expert. But count them. If they have TWO and are not blind the eyes are fine. The colour of your birds eyes is genetic, the colour comes from their parents. It is what it is.
I've attended many eye shows over the years and 99% of the birds that won them never actually raced, let alone win anything.

Here's 4 eyes from some British birds from over 40 years ago. You won't find birds like them today. No birds alive today in the UK, Belgium or Holland have achieved what they have done. What's your views?
